Tell us a little about yourself. When and why did you start baking?My name is Emily Smith and I'm a stay at home mom in Bennington, KS. In 2018, I worked part-time as a night baker at a local bakery. I received a lot of great feedback from customers and decided I wanted to try my hand at stacked cakes. I followed several food bloggers on Instagram so I gleaned some tips from their videos, bought some basic supplies and got started. I knew the cake market was fairly saturated in my area so I decided to try and specialize in something a little different... drip cakes. I wanted to have a signature style that set my cakes apart from other local bakers. My family and friends have been incredibly supportive and I even had an opportunity to begin working with a local event planner to do specialty desserts for weddings, reunions, and corporate parties. I love replicating specialty flavors in my cakes and cupcakes and I look forward to taking on my first wedding cake in May!What is one Cake Stuff item you cannot live without?I love the custom sprinkles and baking emulsions. I prefer to use emulsions in my cakes rather than extracts. I have created so many diverse cakes and buttercream flavors using emulsions!If you could bake/decorate with anyone famous who would it be?I am a HUGE fangirl of Mandy Merriman from Baking with Blondie. She was my inspiration to start baking cakes and her cookbook, Cake Confidence, was a definite game-changer for me and an inspiration for so many of my cakes. Baking with her is definitely on my bucket list!Do you have a local baking business, or do you just bake/decorate for fun?I am currently working out of my home kitchen and have been insanely blessed with supportive family and friends. I have relied solely on word of mouth when it comes to getting orders and I love that my hobby has turned into a little side hustle while I enjoy time at home with my kiddos. I do share my creations on my baking Instagram @totallystackedcakes as a way to catalog all the fun specialty flavors for potential customers.
